      Ingredients
        

      • Non-Stick Cooking Spray
      • 1½ cup all-purpose flour
      • 1 tsp baking powder
      • 1 tsp salt
      • 2 large eggs
      • 1 cup white sugar
      • ⅓ cup unsalted butter melted
      • 3 tbsp fresh lemon juice
      • ½ cup milk
      • 1 cup fresh blueberries If you want to use frozen blueberries then thaw them before using them.
      • ½ cup walnuts chopped
      • 2 tbsp lemon zest grated
      • ¼ cup white sugar
      • 2 tbsp fresh lemon juice

      Instructions
       

      • Preheat your oven to 350 °F.
      • Lightlygrease an 8x4-inch loaf pan with cooking spray.
      • In a medium bowl, add the flour, baking powder and salt and with a wire whisk, mixwell.
      • In another large bowl, add the eggs, sugar, butter and lemon juiceand beat untilwell combined.
      • Add the flour mixture alternating with milk and mix until just combined..
      • Fold in the blueberries, walnuts and lemonzest.
      • Place the mixture into the prepared pan evenly.
      • Bake for about 60-70 minutes.
      • Remove the pan of bread from oven and place onto a wire rack for about 5-10 minutes.
      • Meanwhile, for glaze: in a small bowl, add sugarand lemon juice and whisk until smooth.
      • Then invert the bread onto the wire rack and drizzle with glaze.
      • Let the bread cool completely before serving.
      • Cut the bread into desired-sized slices and serve.
