      Ingredients
        

      • 4 cups crusty bread torn into ½-inch cubes
      • ¼ cup extra virgin oilve oil
      • ½ tsp lemon pepper
      • pinch salt
      • ¼ cup Parmesan cheese grated
      • 2 tbsp mayonnaise
      • 2 tbsp whole milk yogurt
      • 2 tbsp white wine vinegar
      • 1 tbsp extra virgin oilve oil
      • 2 tsp Dijon mustard
      • 2 tsp Worcestershire sauce
      • 2 green olives pitted
      • 1 large clove garlic smashed
      • as required ground black pepper
      • 1 lb cooked chicken breast cubed
      • 1½ lb romaine lettuce torn
      • ½ cup parmesan cheese shredded

      Instructions
       

      • For dressing: in a high-powered blender, addall ingredients and pulse until smooth.
      • For croutons: in a bowl, add all ingredientsand toss to coat well.
      • Heat a 10-inch cast-iron wok over medium-highheat and cook the bread cubes for about 5 minutes, stirring continuously.
      • Remove the wok of bread cubes from the heatand set aside to cool.
      • In a large salad bowl, add the chicken,lettuce, croutons and dressing and toss to coat well.
      • Top with cheese and serve.

      Notes

      For the best result, assemble this chicken Caesar salad just right before it’s served.
