      When baking with white chocolate, you’ll want to make sure you’re using high-quality ingredients. Look for bars of white chocolate made from real cocoa butter, not vegetable fat or other substitute oils. It will give you the best taste and texture for your cookies. If you’re looking for convenience, plenty of pre-chopped chips and chunks are available in the baking aisle that will work just fine.

      How Long Do They Last?

      If stored properly in an airtight container, white chocolate cookies will last up to 2 weeks at room temperature or up to 1 month if refrigerated. For more extended storage, freezing is a great option—they’ll stay fresh for up to 6 months when stored in the freezer. Always thoroughly defrost them before serving so they don’t become soggy.

      Ingredients
        

      • Non-stick cooking spray
      • 1 cup light brown sugar
      • ½ cup granulated sugar
      • 1 cup butter softened
      • 2 eggs
      • 1½ tbsp vanilla extract
      • 2½ cups all-purpose flour
      • 1 tsp baking soda
      • ½ tsp baking powder
      • ¼ tsp kosher salt
      • 20 ounces white chocolate roughly chopped

      Instructions
       

      • Preheat your oven to 350°F.
      • Line a large bakingsheet with parchment paper.
      • In a medium bowl, addflour, baking soda, baking powder and salt and mix well.
      • In a large bowl, addsugarsand butter and beat until creamy.
      • Add in eggs and vanilla extractand beat until smooth.
      • Add flour, baking soda,baking powder and salt and mixing until just combined.
      • Fold in white chocolatechunks.
      • Spoon 1 heapingtablespoon of the batter onto the prepared baking sheet about 2-inch apart.
      • With your hands, slightly flatten the cookies.
      • Bake for approximately 8-10 minutes.
      • Remove from the oven and place the cookie sheet onto the wire rack tocool for about 5 minutes.
      • Carefully invert the cookies onto the wire racks to cool completelybefore serving.
